Ingredients
- 2 egg whites
- 4 tablespoons sugar
- 2 egg yolks
- 1 cup milk
- 5 tablespoons sugar
- 6 tablespoons tapioca (minute)
- 14 teaspoon salt
- 5 tablespoons sugar
- 1 teaspoon vanilla
- 1 (15 ounce) can peaches
Directions

1Beat egg whites with 4 T sugar until stiff and set aside.

2Mix egg yolks in sauce pan with 1 cup milk until well blended.

3Add tapioca, salt, remaining sugar and remaining milk.

4Cook over med/low heat stirring constantly until full boil is reached.

5Boil must remain while still stirring.

6Remove from heat and add vanilla.

7Pour a small amount of the tapioca into the egg whites and fold together.

8Gradually add the rest.

9May be placed in dessert cups to cool.

10Place Saran Wrap over bowl, touching the entire surface of the pudding to prevent skim top.

11Top with canned peaches.
