- 1/4 c. cornmeal
- 1 tsp. dried thyme
- 1 tsp. dried basil
- 1/2 tsp. garlic powder
- 1/2 tsp. lemon pepper
- 4 tsp. blackening seasoning
- 4 (4 oz.) catfish fillets
- 1/2 tsp. paprika
Directions

1Preheat oven to 400°.

2Spray light vegetable oil cooking spray over baking sheet to coat well.

3Put cornmeal, thyme and basil on a plate and mix well.

4Sprinkle fillets with garlic powder, lemon pepper and a generous amount of blackening seasoning.

5Coat thoroughly with cornmeal mixture and transfer to a prepared baking sheet.

6Dust each fillet with 1/8 teaspoon of paprika and spray lightly with cooking spray.

7Bake on the bottom shelf of oven for 20 minutes.

8Reduce heat to 350° and bake 5 minutes more, until crust is golden and fish flakes evenly.
