- 2 Tbsp. oil
- 2 medium onions, sliced
- 1 small head cabbage (8 to 10 c.)
- salt and pepper to taste
- 2 c. long grain white rice
- 4 large cloves garlic, chopped
- 2 tsp. ground cumin
- 1/2 tsp. turmeric
- 1 qt. chicken or vegetable broth
Directions

1Heat oil in large casserole or Dutch oven.

2Add onions; saute over medium heat until softened or about 5 minutes.

3Add cabbage and salt.

4Cover and cook over low heat, stirring often, until cabbage is wilted or about 5 minutes.

5Add rice, cumin, garlic and turmeric; saute about 2 minutes.

6Stir in broth, more salt, if needed, and pepper.

7Bring to a boil.

8Cover and cook over low heat for 20 minutes.

9Serves 4 (main dish) or 6 to 8 (side dish).
