Upside-Down Ham Loaf

Ingredients
- 2 eggs, beaten
- 3/4 c. milk
- 2 Tbsp. grated onion
- 1/2 tsp. dry mustard
- dash of cayenne
- 1 c. soft bread crumbs
- 4 c. ground cooked ham (1 1/4 lb.)
- 2 Tbsp. melted butter or margarine
- 1/3 c. firmly packed dark brown sugar
- 3 slices canned pineapple, cut in quarters
Directions

1Combine eggs, milk, onion, mustard, cayenne and bread crumbs. Add ham, mixing well.

2Melt butter in a 9 x 5 x 3-inch loaf pan. Sprinkle sugar over butter.

3Arrange pineapple on top of sugar. Press ham mixture into pan.

4Bake in moderately hot oven at 375° for 45 minutes. Turn ham loaf out, upside down, on hot platter. Makes 6 servings.
