Upside Down Pineapple Cake

- 2 Tbsp. butter
- 1/2 c. brown sugar
- 1 c. sugar
- 1 c. flour
- 2 eggs
- 1/3 c. fruit juice
- 1 tsp. salt
- 1 tsp. baking powder
- 16 oz. can pineapple rings
- maraschino cherries
Directions

1Melt butter and brown sugar in heavy skillet and simmer a few minutes.

2Mix sugar, flour, eggs, fruit juice, salt and baking powder.

3Place pineapple rings in skillet.

4Place cherries in center of each pineapple ring.

5Pour cake batter over all.

6Place skillet in preheated 350° oven and bake for 30 to 40 minutes. Flip over onto large cake plate immediately out of oven.
