Upside-Down Rhubarb Cake

- 3 c. rhubarb
- 3/4 c. sugar
- 1 1/2 c. marshmallows
- 1/2 c. oleo
- 1 c. sugar
- 2 eggs
- 1 3/4 c. flour
- 3 tsp. baking powder
- 1/2 c. milk
- 1/2 tsp. vanilla
Directions

1Preheat oven to 350°.

2Put marshmallows in a 9-inch square pan. Mix together rhubarb and 3/4 cup sugar and put over the marshmallows. Cream together oleo, sugar and eggs.

3Mix together flour and baking powder.

4Mix milk and vanilla.

5Add alternately the flour mixture and milk mixture to the creamed mixture.

6Pour over rhubarb in pan. Bake for 35 to 40 minutes. Cool 5 minutes, then flip over onto serving plate.
