- 1 (46 oz.) can V-8 juice
- 1 (12 oz.) can carrot juice
- 2 medium potatoes, diced
- 1 medium onion, chopped
- 3 stalks celery, sliced
- 1 c. broccoli florets
- 1 c. cauliflower florets
- 1 c. sliced, fresh mushrooms
- 2 medium zucchini, sliced
- 2 carrots, sliced
- 1/4 tsp. black pepper
- 4 c. torn spinach
Directions

1Put all ingredients (except spinach) in a large Dutch oven. Bring to a boil.

2Reduce heat, cover and simmer 20 minutes.

3Serve and garnish with spinach.
