Val's Banana Bread

  • 12 cup butter
  • 1 cup brown sugar
  • 2 eggs
  • 4 overripe bananas, mashed
  • 1 good banana
  • 2 cups all-purpose flour (I used unbleached)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla

    Cream the butter, vanilla and sugar together, then add eggs and overripe bananas and stir until thoroughly mixed.

    In a separate bowl, mix the dry ingredients.

    Add the banana mixture to the dry ingredients and stir again until thoroughly mixed.

    Cut the good banana into slices or small chunks and fold gently into mixture.

    Pour (it is really thick) into a greased loaf pan and cook 50-60 minutes at 350F.

    Optional: You can add nuts like walnuts or pecans to this recipe if you like nuts.

    I have made it with ground walnuts on top -- you just have to watch and make sure they don't burn.
