Val'S Shrimp Quiche

Ingredients

  • 1 c. peeled shrimp
  • 1/2 c. sliced mushrooms
  • 1/2 c. chopped broccoli or spinach
  • 3 Tbsp. grated onion
  • 1 clove garlic
  • 1 c. grated Cheddar or Swiss cheese or both
  • 3 eggs
  • 1/4 c. cream (may use skim milk)
  • 1 Tbsp. olive oil
  • 1 frozen pie shell, thawed but uncooked
  • salt and pepper to taste

Directions

    Preheat oven to 375°.

    Saute onion and garlic in oil 1 minute. Add vegetables and stir for 2 minutes on medium heat.

    Remove vegetables from pan and saute shrimp in reserved liquid until pink.

    Drain shrimp.

    (Some people like them chopped.)

    Place shrimp, vegetables and cheese in pie shell.

    Whip eggs with cream, salt and pepper to taste.

    Pour over shrimp, vegetables and cheese.

    Bake for 30 to 40 minutes at 375° or until eggs are cooked firm.
