  • 1 shallot peeled and finely diced
  • 1/2 lemon juiced
  • 1/2 vanilla pod halved lengthways and seeds scraped out
  • 7 ounces cod fillet cut into cubes
  • 2 pitted olives green and 2 black, halved
  • 3 cherry tomatoes red and 3 yellow, quartered
  • 4 sprigs fresh coriander chopped, plus extra sprigs for garnish
  • 3 sprigs fresh chives chopped
  • 2 tablespoons olive oil

Directions

    Mix the shallot, lemon juice and vanilla seeds. Add the cod and turn until coated. Season with salt and black pepper and chill for 15 mins.

    Add the olives, tomatoes, cilantro and chives and stir. Drizzle with olive oil and serve garnished with more cilantro.
