Vanilla Chip Lemon Bars

  • 1 1/4 c. all-purpose flour, divided
  • 1 c. granulated sugar, divided
  • 1/3 c. margarine, softened
  • 3/4 c. Hershey's vanilla milk chips
  • 1/2 c. frozen egg substitute, thawed
  • 1/4 c. lemon juice
  • 2 tsp. grated lemon peel
  • powdered sugar

Directions

    Heat oven to 350°.

    In medium bowl, stir together 1 cup flour and 1/4 cup granulated sugar; with pastry blender, cut in margarine until mixture resembles coarse crumbs.

    Press mixture onto bottom of 9-inch square baking pan.

    Bake 15 minutes or until slightly browned.

    Remove from oven; sprinkle vanilla chips over crust.

    In medium bowl, stir together egg substitute, lemon juice, lemon peel, remaining 1/4 cup flour and remaining 3/4 cup sugar; carefully pour over chips and crust.

    Bake 15 minutes or until set.

    Cool slightly in pan on wire rack; sprinkle with powdered sugar.

    Cool completely.
