- 2/3 cup sugar
- 1/4 cup corn starch
- 1/2 tsp. salt
- 2-1/2 cup milk
- 3 eggs, separated
- 1 tsp. vanilla
- 1 9-inch pie shell, baked
- 6 tbsp. sugar
Directions

1In 2-qt saucepan, mix together 2/3 cup sugar, cornstarch and salt.

2Gradually stir in milk until smooth.

3Stir in egg yolks, slightly beaten.

4Stirring constantly, bring to boil over medium-low heat and boil 1 minute.

5Remove from heat; stir in vanilla.

6Cover surface with waxed paper or plastic wrap.

7Cool slightly (no longer than one hour).

8Put filling in pie shell.

9In bowl, with mixer at high speed, beat egg whites until stiff peaks form.

10Gradually beat in 6 tbsp.

12Spread over filling sealing to edge of crust.

13Bake at 350F for 15-20 minutes, until lightly browned.

14Cool at room temperature away from drafts.
