Vanilla Ice Cream

Ingredients

  • 3 c. milk
  • 1 Tbsp. flour
  • 1 c. sugar
  • 1/4 tsp. salt
  • 3 eggs, beaten
  • 1 Tbsp. vanilla
  • 3 c. cream (heavy or light)

    Scald milk.

    Set aside.

    In large bowl mix flour, sugar and salt.

    Add eggs and beat until blended.

    Slowly add scalded milk while beating.

    Put in top of double boiler and cook over boiling water, beating constantly.

    Cook until mixture begins to thicken. Remove from heat and cool.

    Add vanilla and cream.

    Pour mixture into freezer container, filling not more than 3/4 full.

    Freeze according to ice cream freezer instructions.

    Yields about 2 quarts.
