- 1 1/4 c. sugar
- 1/3 c. cornstarch
- 1 1/2 c. water
- 3 egg yolks
- 1/2 c. lemon juice
- 1 1/2 Tbsp. lemon rind, grated
- 1/3 stick margarine
- 3 beaten egg whites
- 1/3 c. sugar
- 1/8 tsp. cream of tartar
Directions

1Mix sugar and cornstarch well.

2Add water and cook, stirring constantly, until clear and thick.

3Add small amount to beaten egg yolks, then add to kettle and continue cooking until egg yolks are cooked.

4Remove from heat, add lemon juice, rind and margarine. Cool and top with meringue:
