Ingredients

  • 1 1/4 c. sugar
  • 1/3 c. cornstarch
  • 1 1/2 c. water
  • 3 egg yolks
  • 1/2 c. lemon juice
  • 1 1/2 Tbsp. lemon rind, grated
  • 1/3 stick margarine
  • 3 beaten egg whites
  • 1/3 c. sugar
  • 1/8 tsp. cream of tartar

Directions

    Mix sugar and cornstarch well.

    Add water and cook, stirring constantly, until clear and thick.

    Add small amount to beaten egg yolks, then add to kettle and continue cooking until egg yolks are cooked.

    Remove from heat, add lemon juice, rind and margarine. Cool and top with meringue:
