- 1 Tbsp. confectioners sugar
- 1/4 c. butter
- 1/4 c. flour
- 1 c. milk
- 4 egg yolks
- 1/2 c. sugar
- 2 tsp. vanilla extract
- 4 egg whites
Directions

1Butter bottom of a 1 1/2-quart casserole and sift confectioners sugar over it.

2Set aside.

3Melt butter in a saucepan; stir in flour until mixture bubbles.

4Remove from heat. Add milk, stirring until blended.

5Return to heat and bring to boiling and cook, stirring constantly, 1 to 2 minutes.

6Cool. Beat egg yolks, sugar and extract together until mixture is thick and lemon colored.

7Stirring vigorously, pour sauce slowly into egg yolk mixture.

8Cool to lukewarm.

9Beat egg whites until rounded peaks are formed.

10Spread egg yolk mixture over egg whites and carefully fold together.

11Turn into casserole set in boiling water bath.

12Bake at 350° for 1 hour.

13Serve immediately with berry puree if desired.
