  • 1/2 cups Unsalted Butter, Softened
  • 1 cup White Sugar
  • 1 Egg
  • 1/4 cups BAILEYSTM Coffee Creamer Frosted Vanilla Cookie
  • 1 teaspoon Vanilla Extract
  • 3 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoons Salt
  • FOR THE FROSTING:
  • 1/2 cups Unsalted Butter, Softened
  • 5 Tablespoons BAILEYSTM Coffee Creamer Frosted Vanilla Cookie
  • 1 teaspoon Vanilla Extract
  • 4 cups Powdered Sugar
  • Food Coloring (if Desired)

Directions

    Preheat oven to 375°F. Line a 9x13 baking pan with parchment paper or spray well with cooking spray. Set aside.

    In a large bowl, beat butter and sugar with a hand mixer or stand mixer with fitted paddle attachment until creamy. Add egg, coffee creamer, and vanilla. Mix until combined. Add flour, 1 cup at a time, followed by baking powder and salt. Mix until just combined.

    Press dough in an even layer into prepared pan. Bake for 16-18 minutes, or until edges begin to turn slightly golden. Remove from oven and let cool completely in pan.

    When bars are cool, prepare frosting. In a large bowl, beat butter until creamy. Add coffee creamer, vanilla extract, and powdered sugar until fluffy. Pour in a few drops of food coloring, if desired.

    Spread frosting onto cooled bars. Lift parchment paper out of pan and cut into bars. Enjoy!
