Vanilla Wafer Fruitcake

  • 13 oz. bag vanilla wafers, crushed
  • 2 c. pecans, chopped
  • 1/2 lb. cherries (candied)
  • 1/2 lb. pineapple (candied)
  • 5 oz. white raisins
  • 2 eggs
  • 1/2 c. white sugar
  • 1 small can Carnation
  • 1/4 tsp. salt

Directions

    Place crushed vanilla wafers in large bowl.

    Add chopped cherries, pineapple, pecans and raisins.

    Mix well using hands. Beat eggs, sugar, milk and salt together.

    Pour over fruit.

    Mix well with hands.

    Place in greased tube pan and press down with hand.

    Wet hand before pressing, it will not stick to cake.

    Bake 1 hour at 325°.

    Cool 15 minutes before removing.
