- 1 1/2 c. dried bread crumbs
- 2/3 c. grated Parmesan cheese
- 1/8 tsp. nutmeg
- 1 1/2 tsp. white pepper
- 2 eggs
- 4 veal chops
- 1/2 c. clarified butter
Directions

1Mix bread crumbs with cheese, nutmeg and pepper.

2Spread in flat dish.

3Put eggs in separate flat dish and beat.

4Using bones as handle, dip meat into egg, then press into bread crumbs until coated.

5Transfer chops to waxed paper.

6With flat side of a cleaver, pound on one side gently to press on crumbs.

7Heat 1/4-inch butter in large skillet.

8Saute until brown on both sides.

9Transfer to paper toweled baking sheet.

10Keep warm in 250° oven.
