Veal Goulash

- 2 lb. veal cubes
- 1 Tbsp. paprika
- 1/4 c. peanut oil
- 1 1/4 c. chopped onions
- 2 medium tomatoes, peeled and wedged
- 1 (8 oz.) can tomato sauce
- 2 tsp. salt
- hot, cooked noodles
Directions

1Dredge veal with paprika; set aside.

2Heat oil in Dutch oven. Add chopped onions and saute until lightly browned.

3Remove onions using slotted spoon and set aside.

4Brown dredged veal on all sides.

5Return onions to Dutch oven.

6Stir in tomatoes, tomato sauce and salt.

7Simmer gently, uncovered, about 1 hour or until veal is tender.

8Serve over noodles.

9Makes about 6 servings.
