Veal Marsala

- 3 1/2 tbsp butter
- 8 (3.5 oz) breaded veal fillets
- 2 None shallots, finely chopped
- 2 tsp flour
- 1/2 cup marsala
- 1/2 cup beef stock
Directions

1Heat 1/2 the butter in a large frying pan over medium-high heat. Working in batches, cook veal to your liking. Remove from pan and cover to keep warm.

2Add remaining butter to pan and cook shallots, stirring, until softened. Add flour and cook, stirring, for 2 mins. Stir in marsala. Bring to a boil then reduce heat and simmer for 2 mins. Add stock. Bring back to a boil then reduce heat and simmer for 4 mins, or until sauce is reduced by 1/2.

3Serve veal topped with sauce.
