- 4 slices veal
- 1 c. beef broth
- juice of 1 lemon
- 3 Tbsp. butter
- 1 small can mushrooms
- 1 Tbsp. cornstarch
- 4 tomato slices
- 4 slices Swiss cheese
Directions

1Pound veal steaks thin.

2Dip in egg and Ritz cracker crumbs. Brown quickly in hot skillet.

3Place in ovenproof dish.

4Top veal with tomato slices.

5Combine broth, butter, lemon juice, mushrooms, salt and pepper. Simmer and thicken with cornstarch. Pour over veal and cover. Refrigerate.

6Can be made the day before. Bake, covered, for 40 minutes at 350°.

7Remove. Top with cheese. Bake until cheese melts.

8May substitute chicken breasts.
