- 2 lbs boiling potatoes
- 1 12 lbs cabbage, quartered
- 4 tablespoons vegan margarine
- 1 cup soymilk
- salt
- fresh ground pepper
- 6 spring onions
Directions

1Peel and quarter the potatoes.

2Slice the spring onions wafer thin.

3Boil the potatoes for 7 to 10 minutes.

4Next add the cabbage to the pot.

5Cook for about 7 to 10 minutes.

6The potatoes should be tender.

7Drain.

8Remove Cabbage and slice into thin strips.

9Add the margarine, half the milk and the salt and pepper to the pot.

10Mash.

11Do not leave lumps.

12Add the rest of the milk and blend until it is a puree.

13It should be thick.

14Add Shredded cabbage.

15Mix until blended.

16Taste and season if needed.

17Return the pot to low heat, stirring frequently until hot.

18Place in heated bowl and garnish with onions.
