- 2 cups unsweetened flaked coconut
- 1 cup coconut milk
- 2 tablespoons maple syrup
- 2 tablespoons flour
- 1 teaspoon coconut extract or 1 teaspoon vanilla
- 1/4 teaspoon sea salt
- 1/3 cup sugar
Directions

1Preheat oven to 350 degrees.

2Bring coconut milk, maple syrup and salt to a boil.

3Whisk in flour.

4Cook over medium-low heat until thickened, about 3 minutes.

5Add the coconut extract or vanilla as soon as it's done boiling.

6Mix in remaining ingredients.

7Using a cookie scoop (preferable) drop onto cookie sheet.

8Bake at 350 degrees for 15 minutes or until golden brown.
