Ingredients

  • 1 cup diced potato
  • 1/3 cup chopped onion
  • 1/4 cup diced carrot
  • 3/4 cup boiled water
  • 1/2 cup raw cashews
  • 1/4 coconut milk
  • 2 tablespoons nutritional yeast flakes
  • 1/2 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 1 3/4 teaspoons sea salt
  • 1 dash paprika
  • 1 dash cayenne pepper (optional)

Directions

    In a small pot bring several cups of water to a boil.

    Add potatoes, carrots, and onions to boil for 10 minutes or until tender.

    Place boiled ingredients into a blender with 3/4 cup of boiled water (preferably same water as just used).

    Add all other ingredients and blend until smooth.

    Enjoy with chips or place in pasta to make macaroni & cheese!
