  • 3 cups Unbleached Flour
  • 2 cups Evaporated Cane Juice Or Sugar
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 1/2 cups Plus 2 Tablespoons Canola Oil
  • 2 Tablespoons Apple Cider Vinegar, Scant
  • 1 whole Vanilla Bean, Split, Seeds Scraped
  • 2- 1/2 cups Water

Directions

    Preheat oven to 350 degrees F. Spray two 9-inch round cake pans.

    Mix together the flour, sugar, baking soda, and salt.

    In another bowl mix the oil, vinegar, vanilla bean seeds, and water with a mixer on low until combined.

    With the mixer on low, slowly add the dry ingredients to the wet and continue mixing until combined.

    Divide the batter evenly between the two prepared cake pans.

    Bake for 25-30 minutes.

    Let cakes cool for 10 minutes in the pans before removing to a cooling rack.

    Top with your favorite frosting.
