Vegetable Beef Soup

  • 3 lb. beef roast
  • 2 large onions
  • 3 large potatoes
  • 1 sweet pepper
  • 2 c. cabbage
  • 1 can each: corn, pinto beans, peas and lima beans (canned or frozen)
  • garlic (optional)
  • 2 qt. tomato juice
  • 1/2 c. sugar
  • 2 tsp. salt
  • 2 cloves garlic (optional)

Directions

    Cook meat until well done in a large pot with plenty of water. When done, add vegetables and tomato juice.

    For fat-free soup, leave off meat and use 3 beef bouillon cubes.

    Cook until done, approximately an hour.
