Vegetable Beef Soup

- 3 lb. beef roast
- 2 large onions
- 3 large potatoes
- 1 sweet pepper
- 2 c. cabbage
- 1 can each: corn, pinto beans, peas and lima beans (canned or frozen)
- garlic (optional)
- 2 qt. tomato juice
- 1/2 c. sugar
- 2 tsp. salt
- 2 cloves garlic (optional)
Directions

1Cook meat until well done in a large pot with plenty of water. When done, add vegetables and tomato juice.

2For fat-free soup, leave off meat and use 3 beef bouillon cubes.

3Cook until done, approximately an hour.
