Vegetable Burger

Ingredients

  • 2 cups diced mixed vegetables (sweet potato, carrot etc.)
  • 1 cup red lentil
  • 12 cup polenta
  • salt or pepper
  • 2 cups water
  • curry (optional) or cumin (optional)

Directions

    Peel and dice all vegetables.

    Place all vegetables into a bowl/pot.

    Pour boiling water over dry ingredients.

    Cook in microwave for 10 minutes/ stove top until cooked.

    Mash vegetables add Polenta and spice mix well.

    May use burger maker, use polenta in burger maker as mixture may stick, or hand roll spoon fulls and roll in extra polenta.

    Lightly fry in pan may use extra light olive oil / or spray.

    Serve with salad.
