Vegetable Burger

Ingredients
- 2 cups diced mixed vegetables (sweet potato, carrot etc.)
- 1 cup red lentil
- 12 cup polenta
- salt or pepper
- 2 cups water
- curry (optional) or cumin (optional)
Directions

1Peel and dice all vegetables.

2Place all vegetables into a bowl/pot.

3Pour boiling water over dry ingredients.

4Cook in microwave for 10 minutes/ stove top until cooked.

5Mash vegetables add Polenta and spice mix well.

6May use burger maker, use polenta in burger maker as mixture may stick, or hand roll spoon fulls and roll in extra polenta.

7Lightly fry in pan may use extra light olive oil / or spray.

8Serve with salad.
