- 2 Tbsp. butter
- 1/4 c. raw rice
- 2 tomatoes, quartered
- 1 medium green pepper, chopped
- 1 medium onion, cut in rings
- 1 summer squash, sliced
- 1 pkg. frozen green beans
- 1 tsp. salt
- 1/8 tsp. black pepper
- 1/2 tsp. oregano
Directions

1Place butter and rice in bottom of 2-quart casserole dish. Add remaining ingredients; cover.

2Bake in a moderately hot oven (375°).

3Stir lightly after 40 minutes.

4Continue to bake, covered, an additional 20 minutes or until vegetables are tender. Serves 4.
