- 2 c. potatoes, peeled and diced
- 1 c. zucchini, diced
- 1/2 c. onion, chopped
- 1 c. carrots, sliced
- 1/2 c. Cheddar cheese, grated
- 1 stick butter or margarine
- 5 Tbsp. flour
- 1 1/2 c. milk
- salt and pepper to taste
Directions

1Combine vegetables in buttered baking dish.

2Melt butter in saucepan.

3Stir in flour.

4Add milk, salt and pepper.

5Allow to thicken.

6Pour sauce over vegetables.

7Stir lightly.

8Cover.

9Bake about 1 1/2 hours in 350° oven.

10Top with grated cheese last 15 minutes of baking.
