- 2 c. fresh corn kernels
- 3/4 c. chopped sweet green or hot pepper
- 2 c. shredded Cheddar cheese
- 2 beaten eggs
- 1/2 tsp. salt
- 3/4 c. peeled and chopped tomato
- 1/2 c. chopped onion
- 1/3 c. cornmeal
- 3/4 c. milk
- 1/4 tsp. pepper
Directions

1In large bowl, combine corn kernels, tomato, pepper, onion, cheese and cornmeal.

2Let stand 30 minutes. Turn into buttered shallow 2-quart baking dish. Combine eggs, milk, salt and pepper. Pour over vegetables.

3Bake at 325° for 35 to 40 minutes or until set.
