Ingredients

  • 1 tbsp oil
  • 1 None onion, chopped
  • 2 cloves garlic, crushed
  • 1 3/4 lbs zucchini, sliced
  • 4 None medium potatoes, peeled, cut into cubes
  • 4 stalks celery, sliced
  • 1 x 14 oz can chopped tomatoes
  • 2 tbsp oregano, chopped
  • 2.5 oz fresh breadcrumbs
  • 2.75 oz Parmesan, grated
  • 2 tbsp parsley, chopped

Directions

    Preheat oven to 400°F. Heat oil in a large saucepan on medium heat. Cook onion for 5 mins, stirring, until soft and golden. Add garlic and cook for 1 min.

    Add zucchini, potatoes, celery, tomatoes, oregano and 1/2 cup water. Cover and simmer for 25 mins, or until potatoes are tender. Pour vegetable mixture into an 8 1/2 cup baking dish.

    Mix together breadcrumbs, Parmesan and parsley and sprinkle over vegetables. Bake for 20 mins, until top is golden. Serve.
