- 4 carrots, sliced
- 2 potatoes (or rutabagas), sliced
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1/2 tsp. basil
- 1/2 tsp. marjoram
- 1/2 tsp. rosemary
- 1/2 tsp. thyme
- 1/2 tsp. white pepper
- 1/2 lb. firm tofu (optional)
- 2 c. cooked white beans
- 2 c. vegetable broth (or water)
- chopped scallions for garnish
Directions

1Preheat oven to 350°. Coat large casserole with cooking spray. Add carrots, potatoes, onion and garlic; saute 5 minutes. Add herbs, tofu, salt if desired and beans. Add enough broth or water to cover, about 2 cups. Cover and bake 45 minutes; garnish with chopped scallions.
