  • 4 carrots, sliced
  • 2 potatoes (or rutabagas), sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1/2 tsp. basil
  • 1/2 tsp. marjoram
  • 1/2 tsp. rosemary
  • 1/2 tsp. thyme
  • 1/2 tsp. white pepper
  • 1/2 lb. firm tofu (optional)
  • 2 c. cooked white beans
  • 2 c. vegetable broth (or water)
  • chopped scallions for garnish

Directions

    Preheat oven to 350°. Coat large casserole with cooking spray. Add carrots, potatoes, onion and garlic; saute 5 minutes. Add herbs, tofu, salt if desired and beans. Add enough broth or water to cover, about 2 cups. Cover and bake 45 minutes; garnish with chopped scallions.
