  • 2 (10 oz. each) pkg. frozen mixed vegetables
  • 1/2 c. boiling water
  • 1/4 c. butter or margarine
  • 1/4 c. all-purpose flour
  • 1 1/2 c. milk, scalded
  • 1/4 c. grated Cheddar cheese
  • 3/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 c. chopped green onions
  • 1/4 c. sliced pimento

Directions

    In a saucepan combine frozen vegetables and boiling water. Bring to a boil again.

    Cover and simmer 5 minutes.

    Drain well. Meanwhile, melt butter in a sauce pan.

    Blend in flour; cook for 1 minute.

    Gradually stir in milk.

    Simmer, stirring, until smooth and thickened.

    Add cheese and seasonings.

    Mix in vegetables, onions and pimento.

    Spread into buttered 1-quart casserole.

    Bake at 350° for 30 minutes or until bubbly.
