- 1 medium onion
- small amount butter
- 12 oz. Velveeta cheese
- 1 can cream of celery soup
- 1 pkg. broccoli-cauliflower-carrot mixture, parboiled
- approximately 2 c. regular rice
- 2 to 3 c. chopped cooked chicken (optional)
Directions

1Saute onion in butter.

2Melt cheese and soup in onion.

3Add vegetables, rice and chicken, if desired.

4Bake in a 2 to 2 1/2-quart casserole or 9 x 13-inch pan at 350° for about 30 minutes.
