Ingredients

  • 1 medium onion
  • small amount butter
  • 12 oz. Velveeta cheese
  • 1 can cream of celery soup
  • 1 pkg. broccoli-cauliflower-carrot mixture, parboiled
  • approximately 2 c. regular rice
  • 2 to 3 c. chopped cooked chicken (optional)

Directions

    Saute onion in butter.

    Melt cheese and soup in onion.

    Add vegetables, rice and chicken, if desired.

    Bake in a 2 to 2 1/2-quart casserole or 9 x 13-inch pan at 350° for about 30 minutes.
