- 1 onion
- 1 green pepper
- 2 Tbsp. butter
- 3 Tbsp. flour
- 3 c. milk
- 1 (10 oz.) pkg. frozen peas and carrots
- 1 (10 oz.) pkg. Cheddar cheese
Directions

1In a medium saucepan, melt butter and saute chopped onion and green pepper until tender.

2Stir in flour.

3Cook 1 minute.

4Add milk and bring just to boiling.

5Add frozen vegetables; reduce heat.

6Simmer, covered, for 20 minutes.

7Gradually stir in grated cheese until melted.

8Season with salt and pepper.
