- 1/2 c. chopped onion
- 2 tsp. margarine
- 4 c. low-sodium chicken broth
- 1 c. carrots, peeled and sliced
- 2 c. potatoes, peeled and diced
- 1 c. cut green beans
- 1 Tbsp. chopped fresh parsley
- 1 tsp. dried tarragon leaves
- 1/4 tsp. black pepper
- 40 fat-free crackers
Directions

1In large saucepan, cook onion in margarine until tender.

2Add chicken broth, carrots, potatoes, green beans, parsley, tarragon and pepper.

3Bring to boil.

4Reduce heat and simmer for 20 minutes or until vegetables are tender.

5Serve with 5 crackers.
