  • 2 Tbsp. chopped onion
  • 1/4 c. chopped celery
  • 2 Tbsp. chopped green pepper
  • 1 Tbsp. butter or margarine
  • 1/2 c. diced potatoes (unpeeled)
  • 1 c. water or stock
  • 1/8 tsp. dried marjoram
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1 c. corn kernels
  • 1 c. green beans, cut in 1-inch pieces
  • 2 Tbsp. flour
  • 1 1/2 c. milk

Directions

    Cook onion, celery and green pepper in butter or margarine for 5 minutes.

    Add potatoes, water or stock and seasonings.

    Cover and simmer until potatoes are tender, about 20 minutes.

    Add corn and beans.

    Cover and simmer 10 minutes longer or until beans are tender.

    Mix flour with small amount of milk; add to remaining milk.

    Stir into cooked vegetable mixture.

    Cook, stirring constantly until slightly thickened.
