- 2 1/2 c. flour
- 1 1/2 c. yellow corn meal
- 1/3 c. chopped green pepper (optional)
- 2 medium carrots, shredded
- 1/4 c. sugar
- 2 Tbsp. double-acting baking powder
- 1 tsp. salt
- 1/2 c. margarine
- 2 eggs
- 2 c. milk
Directions

1Grease pans.

2Mix the first 7 ingredients.

3Melt margarine or butter.

4Stir in eggs and milk.

5Combine with flour.

6Stir just until flour mixture is moistened.

7Quickly pour batter into pan. Bake at 425° for 15 to 20 minutes or until golden brown.
