  • 2 1/2 c. flour
  • 1 1/2 c. yellow corn meal
  • 1/3 c. chopped green pepper (optional)
  • 2 medium carrots, shredded
  • 1/4 c. sugar
  • 2 Tbsp. double-acting baking powder
  • 1 tsp. salt
  • 1/2 c. margarine
  • 2 eggs
  • 2 c. milk

    Grease pans.

    Mix the first 7 ingredients.

    Melt margarine or butter.

    Stir in eggs and milk.

    Combine with flour.

    Stir just until flour mixture is moistened.

    Quickly pour batter into pan. Bake at 425° for 15 to 20 minutes or until golden brown.
