Ingredients

  • 1 cauliflower, cut up
  • 6 tomatoes, cut and peeled
  • 6 to 8 potatoes, small and cut up
  • 1/4 lb. shelled peas
  • 1/4 lb. green beans, sliced
  • 1 Tbsp. turmeric
  • 1 1/2 Tbsp. curry powder
  • 1/2 tsp. salt
  • 1/4 c. butter
  • 6 small onions
  • 1 clove garlic, crushed
  • 1 1/2 c. stock

Directions

    Place vegetables on a large plate.

    Sprinkle with mixed spices and salt.

    Melt butter in a heavy pan.

    Saute the onions and garlic.

    Add the spiced veggies and stock.

    Cover and bring to a boil, simmer for about 20 minutes until all vegetables are tender. Serve with hot cooked rice.
