Vegetable Cutlets

- 1 1/4 c. chopped green pepper (cook if you wish; we didn't)
- 1 1/4 c. grated, raw carrots, packed tightly
- 1 1/4 c. chopped raw spinach, packed tightly
- 3 medium potatoes, boiled and mashed
- 1 Tbsp. grated, raw onion
- 1 Tbsp. parsley
- 3 eggs
- 1 1/2 tsp. salt
- dash of pepper
- 1 1/4 c. matzo meal
Directions

1Mix vegetables and parsley.

2Beat eggs and add to vegetables. Add salt.

3Beat until mixture is smooth.

4Stir in matzo meal and let stand 30 minutes (we didn't let stand).

5Form into patties and fry in vegetable oil until golden brown on both sides.

6(We add 1 1/4 cups grated zucchini and another egg.)
