Vegetable Cutlets

Ingredients

  • 1 1/4 c. chopped green pepper (cook if you wish; we didn't)
  • 1 1/4 c. grated, raw carrots, packed tightly
  • 1 1/4 c. chopped raw spinach, packed tightly
  • 3 medium potatoes, boiled and mashed
  • 1 Tbsp. grated, raw onion
  • 1 Tbsp. parsley
  • 3 eggs
  • 1 1/2 tsp. salt
  • dash of pepper
  • 1 1/4 c. matzo meal

Directions

    Mix vegetables and parsley.

    Beat eggs and add to vegetables. Add salt.

    Beat until mixture is smooth.

    Stir in matzo meal and let stand 30 minutes (we didn't let stand).

    Form into patties and fry in vegetable oil until golden brown on both sides.

    (We add 1 1/4 cups grated zucchini and another egg.)
