- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup carrots Grated
- 2 tablespoons butter
- 1 cup green beans Cooked, coarsely chopped
- 1 cup green peas Cooked
- 3 eggs
- 2 teaspoons salt
- 1 teaspoon pepper
- 4 tablespoons matzo meal for frying
Directions

1Cook the onion, celery and carrots in the butter for 10 minutes.

2Add the beans, peas, 2 beaten eggs, the salt, pepper and matzo meal.

3Mix well and shape into 6 cutlets.

4Beat the remaining egg and carefully dip the cutlets in it.

5Fry in hot fat until browned on both sides.

6Serve with your favorite mushroom sauce.
