- 2 qt. celery
- 2 to 4 red beets
- 6 carrots
- 4 onions
- juice plus grated rind of 3 lemons
- 2 gal. tomato juice
- salt to taste
Directions

1Cook the celery, beets, carrots and onions separately until they are very soft.

2Mash them very fine.

3Strain and add the lemon juice and rind and tomato juice.

4Add salt to taste, then put into jars and cook for 10 minutes.
