Ingredients

  • 2 qt. celery
  • 2 to 4 red beets
  • 6 carrots
  • 4 onions
  • juice plus grated rind of 3 lemons
  • 2 gal. tomato juice
  • salt to taste

Directions

    Cook the celery, beets, carrots and onions separately until they are very soft.

    Mash them very fine.
  3. 3
    Strain and add the lemon juice and rind and tomato juice.
  4. 4
    Add salt to taste, then put into jars and cook for 10 minutes.
