Vegetable Goulash

Ingredients

  • 2 Tbsp. vegetable oil
  • 2/3 c. chopped onion
  • 1/2 c. diced green peppers
  • 1 (20 oz.) can tomatoes
  • 1 tsp. paprika
  • 1 tsp. sugar
  • 1 c. potatoes, diced to 1/2-inch cubes
  • 2 pkg. frozen vegetables, thawed
  • 1 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. cornstarch
  • 2 Tbsp. water

Directions

    Heat oil; saute onions and peppers until tender.

    Add tomatoes, potatoes, mixed vegetables, paprika, salt, pepper and sugar.

    Bring to boil and cook over low heat until potatoes are tender (about 40 minutes).

    Thicken with cornstarch mixed in water.
