- 2 Tbsp. vegetable oil
- 2/3 c. chopped onion
- 1/2 c. diced green peppers
- 1 (20 oz.) can tomatoes
- 1 tsp. paprika
- 1 tsp. sugar
- 1 c. potatoes, diced to 1/2-inch cubes
- 2 pkg. frozen vegetables, thawed
- 1 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. cornstarch
- 2 Tbsp. water
Directions

1Heat oil; saute onions and peppers until tender.

2Add tomatoes, potatoes, mixed vegetables, paprika, salt, pepper and sugar.

3Bring to boil and cook over low heat until potatoes are tender (about 40 minutes).

4Thicken with cornstarch mixed in water.

5Serves 8.
