- 2 qt. chopped ripe tomatoes
- 4 stalks chopped celery (including leaves)
- 1/8 c. minced parsley
- 1 chopped onion
- 1 chopped leek (optional)
- 1/4 tsp. ground allspice
- 1/2 Tbsp. Worcestershire sauce
- 1 lemon, sliced thin
- 1/2 Tbsp. salt
- 1/2 c. carrots, finely chopped
- 1/4 c. green pepper, finely chopped
- black pepper, freshly ground
Directions

1Mix vegetables in large kettle; cook 30 minutes.

2Put through a sieve, then add seasonings.

3Chill and serve, or heat and can in sterilized jars.

4Makes 6 quarts.
