  • 2 qt. chopped ripe tomatoes
  • 4 stalks chopped celery (including leaves)
  • 1/8 c. minced parsley
  • 1 chopped onion
  • 1 chopped leek (optional)
  • 1/4 tsp. ground allspice
  • 1/2 Tbsp. Worcestershire sauce
  • 1 lemon, sliced thin
  • 1/2 Tbsp. salt
  • 1/2 c. carrots, finely chopped
  • 1/4 c. green pepper, finely chopped
  • black pepper, freshly ground

Directions

    Mix vegetables in large kettle; cook 30 minutes.

    Put through a sieve, then add seasonings.

    Chill and serve, or heat and can in sterilized jars.

    Makes 6 quarts.
