- 1 (10 oz.) box frozen spinach
- 1 c. grated carrot
- 1 medium onion, chopped
- 1/2 c. sliced black olives
- 1 c. sliced mushrooms
- 1 c. green pepper
- 2 eggs
- 1 (16 oz.) cottage cheese
- 1 pkg. lasagna noodles
- 1/4 c. grated Parmesan cheese
- 1 lb. grated Mozzarella cheese
- 1 tsp. basil
- 1 tsp. oregano
- 1/4 tsp. marjoram, thyme, rosemary and sage (each)
- 2 cloves crushed garlic
- 1 large can tomato sauce
Directions

1Combine vegetables and garlic with tomato sauce.

2Combine eggs, cottage cheese, spices and grated Mozzarella cheese.

3Wet lasagna noodles with hot water and layer in a 9 x 13-inch pan.

4Layer veggie sauce and cottage cheese mixture over noodles until the mixtures are gone.

5Sprinkle with Parmesan cheese.

6Cover and cook 45 minutes at 375°.

7Uncover and cook 15 minutes longer.

8(Check the noodles before serving.
