  • 1 (10 oz.) box frozen spinach
  • 1 c. grated carrot
  • 1 medium onion, chopped
  • 1/2 c. sliced black olives
  • 1 c. sliced mushrooms
  • 1 c. green pepper
  • 2 eggs
  • 1 (16 oz.) cottage cheese
  • 1 pkg. lasagna noodles
  • 1/4 c. grated Parmesan cheese
  • 1 lb. grated Mozzarella cheese
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1/4 tsp. marjoram, thyme, rosemary and sage (each)
  • 2 cloves crushed garlic
  • 1 large can tomato sauce

Directions

    Combine vegetables and garlic with tomato sauce.

    Combine eggs, cottage cheese, spices and grated Mozzarella cheese.

    Wet lasagna noodles with hot water and layer in a 9 x 13-inch pan.

    Layer veggie sauce and cottage cheese mixture over noodles until the mixtures are gone.

    Sprinkle with Parmesan cheese.

    Cover and cook 45 minutes at 375°.

    Uncover and cook 15 minutes longer.
