- 2 pkg. spinach
- 1 Tbsp. oil
- 1 c. grated raw carrots
- 2 c. sliced mushrooms
- 1 (15 oz.) can tomato sauce
- 6 oz. can tomato paste
- 1/2 can black olives
- 1 1/2 tsp. oregano
- 2 c. cream-style cottage cheese
- 1 lb. Monterey Jack cheese, sliced
- 1/4 c. grated Parmesan cheese
Directions

1Make noodles 8 to 10 minutes.

2Make spinach (defrost ahead of time).

3Saute carrots and mushrooms in oil until soft, crisp and tender.

4Stir in tomato sauce, paste, olives and oregano.
