  • 1 Tbsp. oil
  • 1 onion, minced
  • 1 clove garlic, minced
  • 1 carrot, grated
  • 1 zucchini, grated
  • 8 to 10 mushrooms, sliced
  • 1/4 c. Parmesan cheese
  • 16 oz. cottage cheese
  • 8 oz. Mozzarella cheese
  • 1 jar spaghetti sauce
  • 1 pkg. cooked lasagna noodles

Directions

    Saute together the first 6 ingredients.

    Mix together the Parmesan cheese, cottage cheese and Mozzarella cheese.

    Layer sauce, noodles, cheese and vegetables.

    Bake at 350° for 45 minutes.
