- 1 lb. pkg. lasagna noodles, cooked
- 1 pkg. frozen spinach (10 oz.)
- 1 large jar spaghetti sauce
- 1 lb. Ricotta cheese
- 1 lb. Mozzarella cheese (solid)
- 2 green peppers, chopped coarsely
- 2 red peppers, chopped coarsely
- 10 large mushrooms, chopped
- Parmesan cheese, grated (for topping)
Directions

1Saute peppers and mushrooms until soft. Drain.

2Prepare frozen spinach. Drain thoroughly and mix with Ricotta cheese. Slice Mozzarella cheese into cracker size pieces.

3Spread thin layer of sauce in bottom of baking pan. Add noodles, sauce, spinach mixture, vegetables, slices of Mozzarella and more sauce. Repeat layers, ending with noodles and remaining sauce. Top with Parmesan cheese.

4Cover with foil and bake at 350° for 1/2 hour or until bubbly.
