- 1 onion
- 1/2 lb. mushrooms, sliced
- 3 small zucchini, sliced
- 4 carrots, sliced
- 1 c. spinach
- 6 oz. Monterey Jack cheese
- 2 c. cottage cheese
- 1 clove garlic, chopped
- 1/8 tsp. oregano, basil and thyme
- shredded Mozzarella and Cheddar (optional)
Directions

1Steam zucchini, mushrooms, carrots and onion until tender. Add spinach and spices until warm.

2Layer noodles, veggies and cheeses with cheese over last layer of noodles.

3Bake at 375° for 40 to 50 minutes.
