- 2 c. sliced mushrooms
- 1 large eggplant
- 1 1/2 c. cottage cheese
- 1 1/2 c. Mozzarella, shredded
- 1/4 c. Parmesan cheese
- 1 Tbsp. parsley, chopped finely
- 1 (15 3/4 oz.) spaghetti sauce
- 8 oz. lasagna noodles, cooked as directed on pkg.
- 1/4 c. Italian bread crumbs
Directions

1Place zucchini in microwave-safe dish.

2Cover, but leave one corner to vent.

3Cook 5 minutes on High or until tender-crisp. Stir in mushrooms. Cover and cook 5 minutes longer. Drain off liquid; set aside.
