  • 2 c. sliced zucchini
  • 2 c. sliced mushrooms
  • 1 large eggplant
  • 1 1/2 c. cottage cheese
  • 1 1/2 c. Mozzarella, shredded
  • 1/4 c. Parmesan cheese
  • 1 Tbsp. parsley, chopped finely
  • 1 (15 3/4 oz.) spaghetti sauce
  • 8 oz. lasagna noodles, cooked as directed on pkg.
  • 1/4 c. Italian bread crumbs

    Place zucchini in microwave-safe dish.

    Cover, but leave one corner to vent.

    Cook 5 minutes on High or until tender-crisp. Stir in mushrooms. Cover and cook 5 minutes longer. Drain off liquid; set aside.
